This is officially my favorite banana bread or banana muffins recipe. They're super moist and best of all delicious, yet they're sugar free and gluten free!!
Dianne's Banana Bread Recipe:
1/2 cup cooking oil
1/2 cup honey (can be reduced if desired)
2 eggs (beaten)
3 ripe bananas (mashed)
2 cups gluten free oat flour
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. cinnamon
3 tbsp. milk
1/2 tsp. vanilla
1/2 cup nuts or raisins
or 2 cups of blueberries (my personal favorite choice)
Directions:
Beat oil and honey together. Add egg and banana pulp and beat well. Add milk and vanilla and beat a bit more. Gradually add sifted dry ingredients and blend well.
Stir in blueberries (or raisins or nuts).
Pour into well greased and floured loaf pan.
Bake at 350 degrees F for approximately 1 hour. Check. If not done - turn oven off to prevent over-browning - then leave in the oven until toothpick comes out clean. Suggest 8 minutes at first and check again - if still not quite cooked, try 5-7 minutes more.
Cool well and store overnight before cutting.
Time varies if making smaller loaves (approximately 30 minutes)
This will make 4 small loaves.
Muffins - Bake approximately 15 minutes
Mini Muffins - Bake 12-13 minutes
Beware, these may cause joy when consumed!!!
