Hey people!
We have for you this amazingly easy & delicious Cranberry Brie Sandwich recipe.
This is a really neat combination - it has a slightly sour taste from the cranberries and sour cream, and then a bouncy, sensation from the bits of Brie cheese plus a surge of freshness from the grapes and lettuce - all put together into one delicious sandwich!
I (Liz) really enjoyed this sandwich when I was over in Ireland this past July. I didn't expect it to taste that spectacular when I ordered it at the restaurant, but I was surprised! I decided to try re-creating it. I'm sure I put in some different stuff than the restaurant did, but it still tasted just as good. :)
Cranberry Brie Sandwich
Ingredients:
For The Sauce:
1 Tbsp mayonnaise
1 Tbsp sour cream
For The Sandwich:
2 whole wheat slices of bread
Enough cranberries to cover both slices of bread
(see 2nd picture) -- about 3 Tbsp in total
1/2 leaf of Romaine lettuce (divided)
2 and 1/2 Tbsp sliced brie cheese
1/3 cup + 1 Tbsp red grapes
Directions:
1. For The Sauce: Mix mayonnaise and sour cream together.
2. For The Sandwich: Spread about 1/3 of sauce generously over both slices of bread.
3. Cover both slices with cranberries.
4. On one of the slices of bread, place enough lettuce to cover the cranberries.
5. Cut grapes in half (length wise). And immerse into the remaining sauce.
6. Spread grape mixture over the lettuce.
7. Chop the brie cheese into small pieces.
8. Sprinkle over the other slice of bread which only has cranberries on it at this point.
9. Now you can put the two slices of bread together to make a spectacular sandwich!

This looks really yummy! I love that you are re-creating things from your trip-it's fun to learn about different food combinations, especially from other countries. This is also great for chronicling memories. Super idea :)!
