Peanut Butter Chocolate Chip Bars

A delicious, bar filled with decadent chocolate and creamy peanut butter...

Here is a low sugar bar that you can enjoy and feel good about while watching a movie with your family, reading a intriguing book, or having guests over. 

Tip: Remember to always read through the whole recipe carefully before beginning and follow it precisely while making it, so you don't make the same mistake I did. I forgot to divide the chocolate chips and put too many in the squares and didn't have enough for the top! Chocolate overload 101. O.o



Peanut Butter Chocolate Chip Bars
Yield: 12 bars

Ingredients

1/2 cup butter
1 cup peanut butter
3 eggs
1 Tbsp vanilla
1 and 1/4 cup coconut sugar
1 cup all-purpose flour
12 oz semi-sweet chocolate chips (divided)

Directions

1. Begin by creaming together the butter and peanut butter.
2. Next add the eggs, vanilla, and coconut sugar.
3. Beat well then add the flour.
4. Mix until combined well and creamy, then hand mix in 1 cup of chocolate chips.
5. Pour the batter into an 8 x 11 baking dish.
6. Bake at 350 degrees F for 25 minutes.
7. Remove from the oven and top with the additional chocolate chips.
8. Wait 5 minutes for the chocolate to melt, then spread it across the top of the bars.
9. Allow to cool.
10. Slice into squares.

    3. Yes, you can use the same amount of white sugar, or even better, use 1 cup of brown sugar and 1/4 cup of white sugar. Either or will work. :) Let me know how they turn out!

    4. One other note: Make sure not to over back these--otherwise they'll be super dry. ;) When they're done they'll be bubbling quite a bit. When you see that, take them out of the oven right away. These bars are supposed to be slightly gooey.
