Patio Tacos

These tacos are the perfect dinner to have on your patio on a beautiful summer evening.


Normally my family pulls out this recipe as soon as summer hits. We really enjoy it on warm, sunny days.
We bought some nice turquoise and yellow colored plastic plates last year that we enjoy using out on our patio! There's something very refreshing about being able to go outside and have a delicious meal together before the sun goes down.


I love that you can practically put anything you want on these tacos! If you're an olive lover, or cheese lover, you can do all different kinds and they would go very well.

It would also work well to fill up a tortilla wrap with this filling, and top it with your favorites!

One another thing is that it doesn't take very long to make. The most time consuming part of this recipe is browning the meat, and after it's basically just waiting for that mixture to warm up; and during that you can cut up the tomatoes, shred the cheese, tear up the lettuce, and whatever other toppings you'd like!

Patio Tacos
Makes 4 - 6 servings

Ingredients
1 lb. ground beef
1 onion, chopped
1 can low-sodium tomato soup 
Chili powder to taste
1 can pork and beans
1 pkg. gluten free corn chips
1 and 1/2 cup shredded cheddar cheese
1 head lettuce, shredded
2 tomatoes, diced

Directions
  • Brown hamburger and onion. Add soup, chili powder and pork and beans. Simmer 15 minutes.
  • On a plate, place a handful of chips, followed by hamburger mixture, then cheese, lettuce, and tomato. Enjoy!
