Almond Butter Cookies {Sugar Free}


These cookies have an incredible dimension of flavour to them that you will love! It's almost like you can't put your finger on what you're tasting when you eat these delicious cookies. They have a hint of lemon flavor amongst the inviting almond flavor. Trust me, it's delectable!

They're light and fluffy with a nice buttery consistency, and the couple of slivered almonds over top add a slight crunch in the centre. These are also super quick and easy to make! It's the perfect festive Christmas or New Year's cookie!


These cookies are also refined sugar free! Here we're using coconut sugar. I feel a lot better over Christmas time when I can bake things that are healthier, and not load up quite so much on the typical sugary Christmas treats. I'm sure you feel the same way! Well, these are just as good as sugary sweets, but instead guilt free! Doesn't that sound so epic?!



Almond Butter Cookies {Sugar Free}

Ingredients

2 cups all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1 cup butter
1 cup coconut sugar
2 egg yolks
1/2 teaspoon lemon extract
1/2 teaspoon vanilla extract
1 teaspoon almond extract
Small handfull of blanched slivered almonds

Directions

In a medium sized bowl, stir together flour, baking powder, and salt. Set aside
With a mixer, cream together butter and coconut sugar until light and fluffy. Add egg yolks and continue beating. Blend in extracts.
Gradually add flour mixture and mix until combined.
Place one inch balls of dough on an ungreased baking sheet. With a fork, flatten dough and place one or two slivered almonds in the centre.
Bake at 300 degrees F. for 15 - 20 minutes, or until lightly browned around the edges. Cool on wire rack.
