Zucchini Brownies {Gluten Free}

These Zucchini Brownies are the fudgiest, richest brownies you'll ever taste. You can't really eat them with your hands, they're a 'fork' kinda browny, 'cause they're just so gooey! AND they're gluten free!





In order to make this recipe a bit healthier, I replaced the white sugar in the brownies with coconut sugar. I did not replace the powdered sugar in the frosting, so this recipe is not totally sugar free.  I do think these brownies would also taste great without the frosting, then you'd have a great sugar free and gluten free brownie to enjoy!


Zucchini Brownies

Ingredients:

FOR THE BROWNIES:

2 cups Gluten Free oat flour
1/2 cup pure cocoa powder
1 and 1/2 teaspoons baking soda
1 teaspoon salt (optional)
1/2 cup olive oil
1 and 3/4 cups coconut sugar
2 teaspoons vanilla extract
2 cups shredded zucchini (1 large or 2 small zucchinis)
3-5 tablespoons water

FOR THE FROSTING:

3 tablespoons cocoa powder
1/4 cup butter, melted
2 cups powdered sugar
1/4 cup milk
1 Tablespoon vanilla extract

DIRECTIONS:

1. Preheat oven to 350 degrees F. Spray a 9x13" baking pan with cooking spray or olive oil. Set aside.
2. In a medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside.
3. Using an electric mixer, mix together the oil, sugar, and vanilla until well combined. Add the dry ingredients and stir. Fold in the zucchini. Mix up the batter and if it is quite powdery start gradually mixing in (using your hands) 1 Tablespoon of water at a time until you reach a pretty thick consistency. Although it shouldn't be too thick; make sure it's slightly watery -- we don't want the brownies to turn out too dry. Do not add anymore than 5 Tablespoons of water. Spread in prepared pan.
4. Bake 25-30 minutes or until tooth-pick comes out clean.

5.To Make The Frosting: Whisk butter, cocoa, and powdered sugar. Whisk in milk and vanilla. Spread over cooled brownies. Cut into squares and chill to semi-set. The frosting hardens slightly on the top but stays wet and gooey underneath.
