Tender chicken, coated in a delicious almond mixture with a slight kick to it.
Usually I'm not a big fan of chicken, especially chicken breasts, but this recipe surprised me! I loved it. All the delicious spices and the ground almonds added a whole new dimension to chicken breasts. The olive oil makes the breasts slightly juicy, which is exactly how I like it.
It's an easy recipe to make up, and you can make it even easier by making up the almond mixture, packaging it up in zip-lock bags, and storing in the freezer. Then you can pull it out of the freezer and coat the chicken breasts, drizzle on the olive oil, and get it into the oven in just a few short minutes. It's fast, easy, and so, so good! Not to mention that it's a really healthy meal, especially since it has almonds in it, which are really good for you!
I like to have sweet potatoes and a salad with the chicken. The other day we had the almond chicken with the Strawberry Almond Salad we posted a while ago on the blog. Wow! Was it ever goood. :)

Spiced Almond Chicken
Yields: 4 servings
Ingredients
1 cup ground almonds
2 Tablespoons dried oregano
2 Tablespoons dried basil
2 Tablespoons dried parsley
1 teaspoon salt
2 teaspoons pepper
4 Tablespoons extra-virgin olive oil
4 boneless, skinless chicken breasts
Directions
Preheat your oven to 450 degrees F. Combine the almonds, oregano, basil, parsley, salt, and pepper in a small bowl. Rinse the chicken breasts and pat dry with paper towel and set aside. Gently coat the chicken on each side with the almond mixture and place in a shallow glass baking dish. Drizzle the olive oil over the chicken and bake in your preheated oven for 12 to 15 minutes, depending on the thickness of each chicken breast.
