This cake is a lemon flavor explosion.
Lemon is one of my favorite flavors especially for cakes, and this gluten free pound cake is perfect.
The cake itself is delicious and so moist, but the icing brings the cake to a whole other level.
Credits go to my cousin, Jessica, for making this cake. She and I went on a bit of a baking spree one evening and made 3 different recipes. This being one of the ones she made. She did a great job -- it turned out really well!

Fresh, classic, and irresistible...
I've been on the hunt for a good gluten free sponge cake recipe for a while now. I made one recipe that I found in a cookbook, and it was waaay too dense. It was more like a white cake that was too heavy, then a light and airy sponge cake. I used the basics of the recipe I made, along with research on the science behind cakes and the ingredients that make up the different consistencies, and I created my own version of a Gluten Free Sponge Cake.
I learned three main keys to making a sponge cake. 1. Make sure that you beat the egg whites until very, very fluffy. 2. Don't let the batter or egg whites sit around long. This recipe has to be made systematically and without breaks. 3. The eggs have to be at room temperature.
Now I have a recipe that I don't feel bad about eating, and it doesn't leave me feeling stuffy afterwards like a lot of recipes with flour in them sometimes do. This leaves me feeling fresh afterwards, especially when I have strawberries over top.

An incredibly moist, flavorful, and very chocolatey cake; this is perfect for birthday cakes, or just a delicious dessert for when entertaining company.
Listen up chocolate lovers!! This cake is seriously the best. It's like a chocolate explosion! I used a recipe from A Girl Defloured, and made a couple modifications to my liking. I honestly can't recommend this as the lowest calorie or lowest sugar recipe ever, but for any of you out there who just needs a gluten free cake, this is perfect.
The texture of this cake is so open and spacious. It's not dense, or heavy, and the icing is very complimentary. It's perfect with a scoop of vanilla ice-cream to balance the rich chocolate taste.

Rhubarb Crumble

Delicious and slightly tart, this rhubarb crumble is another one of my favorite desserts.
So sorry for the long break between posts this past month. It's been a busy few weeks! But we're back with a incredibly delicious Rhubarb Crumble!
Often my sister will make this Friday nights for us to enjoy while watching a movie. It's a quick dessert to make, and it doesn't dirty many dishes at all. Altogether, it's pretty awesome, peoples!!
There's not too many ingredients, and you most likely already have them in your kitchen. We have a lot of rhubarb in our garden this year, so we'll make sure to pick most of it, cut it up and put it into the freezer so we can enjoy these desserts all year round!
We always try and cut down on the sugar in this recipe as much as we can without making the rhubarb too tart. There is sugar content in this recipe, but only as much as necessary. I have yet to experiment with some sugar substitutes. I'll post a sugar free adapted version once I've experimented with it and found the perfect one. :)
I especially love the yummy crumble that is sprinkled over the rhubarb. It adds something special to the dessert. You should try it for yourself!

Full of delicious veggies marinated in a sweet sauce, with a splash of pineapple throughout, this Sweet & Sour Stir-Fry is a wonderful main course for dinner, that you'll love :)
This was my grandma's recipe that we've used for years now. It's definitely a favorite! You can pretty much put any vegetables in it you please, it's a very easy recipe to switch up.
Our family usually likes to put in bell peppers (my personal favorite is red), carrots, broccoli, onion, and our latest addition is mushrooms. As well, we add some chopped up chicken breast and pineapple.
And of course we can't forget the sauce! I love this sauce. As you can guess from the name, it's sweet and sour. So we use the drained pineapple juice from the can we used in the veggie mixture, and we put it together with some brown sugar, dried mustard, cornstarch, vinegar, water, and ketchup.
This goes over-top delicious brown rice!

Tender chicken, coated in a delicious almond mixture with a slight kick to it.
Usually I'm not a big fan of chicken, especially chicken breasts, but this recipe surprised me! I loved it. All the delicious spices and the ground almonds added a whole new dimension to chicken breasts. The olive oil makes the breasts slightly juicy, which is exactly how I like it.
It's an easy recipe to make up, and you can make it even easier by making up the almond mixture, packaging it up in zip-lock bags, and storing in the freezer. Then you can pull it out of the freezer and coat the chicken breasts, drizzle on the olive oil, and get it into the oven in just a few short minutes. It's fast, easy, and so, so good! Not to mention that it's a really healthy meal, especially since it has almonds in it, which are really good for you!

The creamy, chocolaty sensation you have when you sip on this drink is amazing. I mean, why spend the money at Wendy's when you can make it at home?
It has simple ingredients. All you need is almond milk, cocoa powder, vanilla, xanthan gum (key ingredient!!), maple syrup, and a frozen banana.
If you don't have almond milk, feel free to use normal milk!
It takes a few short minutes to make this, so go get started!

Easter is almost here, guys! Have you planned your menu yet? If not, or you still want to add a couple more things to it, we've put together a few of our favorite recipes that might help inspire you as you plan. :)
My family is planning to have turkey and gravy, my sisters amazing cranberry salad, stuffing, whipped potatoes, salad, and sweet potato. We still have to work out what we'll have for dessert.
This Easter will be extra special for my (Liz's) family. It is of course always special because it is when family can come together to celebrate Christ rising from the grave, which is one of the most important and extraordinary times in History that we can celebrate. Without Him dying on the cross and rising from the grave, we could not have the truly amazing gift of salvation. Easter is always special, but I think it'll be even more memorable this year, since for the first time in my life on Easter, all of my extended family on my mom's side is going to be together! I'm really looking forward to the special memories that'll be made, as well as enjoying all the wonderful food & fellowship.

This is my favorite bundt cake evah! It's moist, fresh, and delicious. The apples, pecans, nutmeg, and cinnamon is what makes this so good. But, what makes is really good is the topping we put over it. It gives a sweet, caramely taste that you'll love!

These are the perfect classic dinner rolls. As soon as you bite in, you're greeted with a fresh, buttery taste.
I love making these for an extra treat for dinner. They go so well with so many meals; especially soup! On Saturday I made them for my grandpa's birthday celebration. I also made a New York Style Cheesecake during/after making these rolls for his birthday cake. So Saturday was a very busy day in the kitchen! But I love baking, so I don't mind spending lots of time there. :)
