Homemade Pumpkin Pie Spice

You guys must be able to relate to me when you want to make the most amazing fall recipe, such as a pumpkin pie, this caramel popcorn, or these pumpkin cream cheese swirl muffins, but you don't have any pumpkin pie spice. So, you might result to just putting a bit of cinnamon and nutmeg in instead; but that doesn't always cut it.
As a solution, I have a very easy recipe here for homemade pumpkin pie spice that does contain nutmeg and cinnamon, but is amped-up with some allspice and ginger, as well! Making pumpkin pie spice at home is also cheaper than buying it at the store, and you have control over your measurements.  If you're more of a nutmeg girl, or you really like ginger, go ahead and put a bit extra in this mixture.

I love using Watkins spices in my baking, which is what I'm using here. They have great flavor and they're high-quality. If you have never tried them, I totally recommend you do! Most of their products are natural and they're made in the USA.
So, now that we have established that you should totally use this homemade spice recipe, and make it with Watkins spices, shall we get on over to our kitchen and make a batch? Fantastic! ;)

Gluten Free Pumpkin Cream Cheese Swirl Muffins

These muffins are just perfect for fall! Each bite your greeted with a taste of autumn. The cream cheese topping adds a great dimension to these muffins; it's soft and slightly gooey and makes them so deliciously moist.

I'm rather excited to have fall here... the hot chocolate, cozy sweaters, boots, pumpkins, apples, spices, and of course the fall flavored David's Tea!
I love looking through Pinterest at all the lovely fall recipes. (You can take a look at our Pinterest page here!) They all look sooo good...baking with fall ingredients is rather awesome. :)

Our family just harvested the pumpkins we grew this year. My sister canned some of it, so I'm enjoying using some of the filling for recipes such as this. It'll be great to have the filling canned throughout the year to use. (Plus it makes a great dog treat!)

Stay tuned for some more fall/thanksgiving recipes coming in the next little while... But in the meantime, go take a look at the recipe below and make sure to get in the kitchen and try these! I'm sure you'll love'em. :)

Spiced Almond Chicken

Tender chicken, coated in a delicious almond mixture with a slight kick to it.

Usually I'm not a big fan of chicken, especially chicken breasts, but this recipe surprised me! I loved it. All the delicious spices and the ground almonds added a whole new dimension to chicken breasts. The olive oil makes the breasts slightly juicy, which is exactly how I like it.
It's an easy recipe to make up, and you can make it even easier by making up the almond mixture, packaging it up in zip-lock bags, and storing in the freezer. Then you can pull it out of the freezer and coat the chicken breasts, drizzle on the olive oil, and get it into the oven in just a few short minutes. It's fast, easy, and so, so good! Not to mention that it's a really healthy meal, especially since it has almonds in it, which are really good for you!

Classic Shepherd's Pie

Classic. Savory. Delicious.

This is our family's 'go to' recipe for whenever friends or family are coming over and we need something easy for dinner that everyone will love. The garlic powder adds a nice seasoned taste to the delicious ground beef layer and the whipped potato just tops this whole dinner off.

Perfect For Game Day: Mild Salsa

Not to sweet, or too sour - or more like not too spicy, not too bland! It's the perfect combination of spice with a bit of kick to it. :)
