Gluten Free Carrot Cake

This is the perfect classic carrot cake. Great for get togethers or for a birthday!

This recipe is very popular in our family. Often it'll be requested for a birthday cake or just as a regular dessert to enjoy after dinner. The cream cheese frosting is divine, and the actual cake itself is so moist. The pecans add a nice dimension and a little crunch to the cake. Usually I put it in a 9x13 pan, and that'll last us for a while. If you don't want that much cake, you can half the recipe.

I took out the granulated sugar and substituted with coconut sugar. There's also some brown sugar, as well as icing sugar in the frosting. All in all, there isn't a huge amount of processed sugar in this recipe compared to most cakes. It is also perfect for anyone who prefers or has to eat gluten free.

Classic Shepherd's Pie

Classic. Savory. Delicious.

This is our family's 'go to' recipe for whenever friends or family are coming over and we need something easy for dinner that everyone will love. The garlic powder adds a nice seasoned taste to the delicious ground beef layer and the whipped potato just tops this whole dinner off.

Fall Carrot Soup

Ah, fall is definitely in the air. Another reason why I just needed to share my favorite soup recipe!

It's quick, simple, and it'll warm you right down to your toes. ;)

Summer Carrot Smoothie

After a month of being away in the UK touring sites such as Giants Coseway, Windsor Castle, Edinburgh Castle, and the family farm in Ireland, I've (Liz) arrived home freshly enthused to get back in the kitchen!
Last night I was craving a fresh unique smoothie so badly since I hadn't had much of that kind of thing the past few weeks; so I went and looked around in my fridge to see what I had...and wala!...I came up with this yummy Summer Carrot Smoothie. :)
